Simple vegetable rice

Ingredients:
1 cup of cut vegetables
1cup rice
Salt to taste
Jeera 1table spoon
Green chilli/Mirchi 4 split
Curry leaves .
Oil 1tsp
Process:
Procedure for this is actually very simple..
Add oil in your pressure cooker or electric cooker
(Note : Electric cooker should be in cooking mode for our jeera to fry properly. For this we have to close the lid and keep an eye so that jeera doesn't burn..
Or simply make the tadka separately and mix in the boiling water. )
Once oil is hot add jeera let it fry , add split green chilly fry
Now add cut vegetables and stir fry for a minute. Add 2 cups water and salt.  Let the water boil.. once water starts boiling add washed rice. Close the cooker lid and wait for 3 whistles.
Switch off the stove after 3 whistles and let it cool.
Take the cooked rice in to serving bowl and mix .
This is full meal on it's own ..
Tastes great with bondi raita..

aloo sabzi in milk gravy

ingredients:
  aloo: medium 4
   tomato : 2
  milk : 1 cup 
 jeera:1tsp
   mustards :1tsp
   hing: a pinch
  coriander pwdr: 1tsp
   mirchi powder : 1 tsp
   turmeric powder.. 1/2 tsp
salt to taste
 jeera pwdr : 1/2 tsp
 sugar : 1/2 tsp
coriander leaves for garnish
 method:

  for this we can cook potatoes in advance or we can let them cook with masala
( I opt for letting it cook with masala)
 so now we take a pan heat some oil add mustard seeds , jeera and let mustard crack..
then add hing , chopped tomatoes, let tomato cook ,
once tomatoes are soft add coriander powder, jeera powder , mirchi powder,turmeric powder..
 let this cook for a few seconds
 and now add chopped aloo and salt , add little water and let aloo cook till its soft ..
once aloo is cooked add milk and sugar ...
and let this cook till the gravy is thick...
 now garnish it with coriander leaves
tastes best with chapati ..
and is equally yummy in hot rice....

sprouts cutlet

hi friends,
here's a new recepie ..
this is both healthy and yummy...
and for those who dont like eating raw sprouts this is a way to eat healthy... :)
for this we need:

sprouts :1/2 cup
boiled potato :1 cup,
corn - 1/2 cup,
beans - 1/2 cup ,
bread crumbs 1/2 cup or a bread slice
i have used multi grain bread slice to make it more healthy
coriander powder : 1tsp
garam masala : 1 tsp
red chilli powder : 1tsp
aamchur: 1 tsp (this is optional this being my daughter's friends party snack i added amchur to make it a bit tangy...)
salt to taste.

now method:
half boil sprouts, corn and beans together..
strain the water and add mashed potatoes, bread slice or crumbs...
now add coriander powder, garam masala, red chilli powder, ammchur..
mix well to make a dough ,make small balls and flaten them in desired shapes if your dough is watery then add a little of corn flour ...now heat a pan and shallow fry the the cutlets by adding a tspn of oil..

soya veg cuttlet

hi friends,
after a long time i am back with a easy snack... yummy soya veg cutlet...
both tatsty and healthy...

for this we need :
  *soya chunks : 1 cup (soak in water for 5 min and strain the water)
  *any vegetables of your choice 1/2 cup(cooked)(we can also use left overs like cabbage curry or mutter curry)
  *one medium potato cooked and mashed
  *one table spoon  flour (rice or all purpose flour or corn flour).
  *1 teaspoon aamchur .
  *1 teaspoon garam masala or coriander powder
  *1 teaspoon red chilly powder.
  * fresh coriander leaves
  * 2 table spoons milk or water and flour mix
  * 1 table spoon sooji
  *salt to taste
  method:
       in a bowl mix soaked soya chunks , mashed potatoes, veggies,
       flour, aamchur, garam masala, chilly powder, coriander leaves and finally salt..
  donot use any water, the water in soya is enough for mixing...
     now make small balls and press them with hands in to the desired shape,
now dip in milk or water and flour mix now roll the cutlet in sooji,
now heat a pan add a tea spoon of oil and keep all the
prepared cutlets and shallow fry on both sides till brown
now serve with tomato sauce ....

garlic chutney

0hi friends,
after a long time i brought one more delicious , mouth watering chutney 0

for this garlic chutney...

garlic : 10 peeled
red chilly: 8
tamarind paste : 1/2 tspn
black gram: 1 tspn
jeera:1 tspn
oil to fry
turmeric a pinch
salt to taste
method :
soak red chillies, tamarind, garlic in little water for 15 min
in a pan heat oil fry jeera and black gram once black gram is red add this to soaked garlic and others,
let black gram soak for 5 more min
now add turmeric and salt and grind this to chutney.
add little amount of sugar (1/4 tspn).
Best for dosa and idli .
I loved it in hot rice 0

simple mango chutney

hi frnds.....
Its Mango season .... and here is a simple mango chutney
for this we need:
raw mango: finely chopped,
red chillies: 4
mustards: 1 tpsn,
jeera : 1 tspn,
blackgram: 1 tspn
oil
hing a pinch
turmeric a pinch
salt to taste
Method :
In a pan heat oil ,fry mustards, jeera and black gram
when mustards crackle add red chillies,
grind mango , hing , turmeric,salt and tadka to paste
yummy mango chutney tastes best with hot rice, dosa, idli.....

variety oats dosa

hi frnds ,
for this we need:
oats : 1 cup,
rice flour: 2 tbsp
whole wheat flour : 2 tbsp,
salt for taste
grated caroot: 2 tbsp
finely chopped onion : 2 tbsp.
finely chopped chilles : 2 tbsp.
finely chopped ginger : 1 tbsp
curd 2 cups
method:
in a bowl add oats , curd .
keep a side for 1 hour.
in this batter add rice flour, whole wheat flour, chopped veggies and salt to taste.
on a dosa tawa make a dosa and donot hurry let the dosa become red .
serve with coconut chutney....
A very yummy and healthy start for the day.....
